No Bake Strawberry Icebox Cake

If you love Strawberry Shortcake, then you’re going to love this simple and festive Strawberry Icebox Cake! With only three ingredients to make this cake, you’ll have plenty of time to prep for the rest of your dinner. Make this cake the night before to let the ingredients settle beautifully together, but do not worry…this cake will also be ready to serve after 4 hours in the refrigerator.

  • 1.5 cartons of strawberries, sliced
  • 1.5 tubs of extra creamy cool whip
  • 4 sleeves of graham crackers

DIRECTIONS:

  1. keep cool whip in fridge or on countertop until you can whip it when it is not frozen.
  2. slice strawberries.
  3. spread a thin layer of cool whip on bottom of casserole dish.
  4. lay down 6 graham cracker, 3 side by side.
  5. spread a thin layer of cool whip on top of graham crackers, and top with strawberries.
  6. spread a thin layer of cool whip on top of strawberries, and repeat process 4 times.
  7. top layer should include cool whip and strawberries.
  8. take extra cool whip and lightly “ice” the sides of the cake.
  9. cover and refrigerate over night or at least four hours until the graham crackers are softened.
  10. keep refrigerated until served.
  11. you can drizzle chocolate sauce on each slice if desired, and enjoy!

Happy Easter!

Happy Easter from my darling Holland Lop, Gizmo! This is just a little happy reminder from my fur baby to your family, to spend time with the ones you love, and please do not bring home an Easter Bunny unless you and your family are prepared to treat your new bunny as part of the family.

You can read more about caring for a Rabbit here, and I do have to say that before we adopted Gizmo to be part of the family, I had to do some research! Rabbits are not at all what I expected them to be, but it turns out they have exceeded my expectations. Not only are rabbits adorable, they have their own little personalities too! They are pretty low maintenance, but fragile creatures that deserve your love and attention. If you do not have the time or room for a rabbit, please give your child a Chocolate Bunny for Easter. Hummingbird Cake

Last Easter I wanted to bring a little Southern Tradition to the table for my soon-to-be husband. He had mentioned chocolate Coca-Cola Cake that he grew up with in Franklin, TN., but since everyone will be indulging with chocolate bunnies I thought of the classic Hummingbird Cake instead. No one from my San Diego Family had ever tried Hummingbird Cake before, so I thought it would be a delicious and fun cake to bake for everyone!

Hummingbird Cake was originally submitted by Mrs. L.H. Wiggins of Greensboro, NC. in Southern Living’s February 1978 issue. This recipe is known to have won numerous blue ribbons at county fairs. The name Hummingbird Cake was derived from the humming sound “mmmmmmm” people made while eating this delicious cake.

Hummingbird Cake Recipe

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon ground cinnamon
  • 3 large eggs, beaten
  • 1 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans
  • 2 cups chopped bananas
  • 1 bag of malt easter egg candy (for decoration)
  • 3 cups of shredded coconut (for decoration)
  • green food dye (for decoration)

Preparation

  1. Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. (Do not beat.) Stir in vanilla, pineapple, 1 cup pecans, and bananas.
  2. Pour batter into three greased and floured 9-inch round cakepans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.
  3. Spread Cream Cheese Frosting between layers and on top and sides of cake.
  4. In a small mixing bowl, prepare the shredded coconut with a few drops of green food dye.
  5. Mix food dye and coconut until you have reached the desired green “grass”.
  6. Sprinkle green coconut on top of the cake, and along the rim of the cake plate.
  7. Top off the grass with the malt easter egg candy.
  8. Store in refrigerator until ready to serve.

Ingredients for Cream Cheese Frosting

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 1 (16-ounce) package powdered sugar, sifted
  • 1 teaspoon vanilla extract

Preparation

  1. Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar, beating at low speed until light and fluffy. Stir in vanilla.

We had a blast making this Christmas Craft, and wore our creations to a Cookie Party for fun!

Here is what you will need to make your Bow-Dazzled Dress:

  • An old Christmas Dress or Skirt that you wouldn’t mind either hot gluing or safety pinning items on.
  • Christmas Gift Bows
  • Tinsel (optional for belt or extra sparkle)
  • Hot Glue Gun (optional)
  • Small Safety Pins
  • Scissors
  • Bottle of Wine to share!

INSTRUCTIONS

  • Before you start pinning or gluing your bows on your dress, place the bows on your dress and create a pattern or design you like!

  • After you have chosen all the bows you’d like to use, carefully dab a small dollup of hot glue on the back of the bow, and lightly press the bow on your dress.

    • If you are going to Safety Pin the bows on, use your Scissors and carefully wedge the blade behind the staple on the bow. This allows for a little more room and secures your Safety Pin to the bow, and then pin the the bow to your dress.
    • If you use Tinsel to create a design, you can either hot glue or safety pin the tinsel to your dress.
    • You can also create a belt of Tinsel to complete your look!

Jolly Holly Christmas Cake

Get in the Holiday Spirit and make your friends & family this Jolly Holly Cake for Christmas!  Not only does this cake look adorable, this bundt cake recipe is as easy as 1, 2, 3!

You can bake any cake recipe you’d prefer, but I went with an old stand-by and favorite in my household, the Holiday Funfetti Cake Mix! Pick up some Cherry Sours Candy & Mint Leaves from the grocery store, and if you’d prefer to make your own white cake mix be sure to pick up some red and green sprinkles for a Funfetti style! After you mix the cake, pour the cake mix into a greased Bundt Pan and follow your cake batter recipe for baking directions.

After your cake has completely cooled (about 45 mins) in the bundt pan, place a plate on top of the opening and flip the cake onto the plate.  Get your Mint Leaves ready by giving them a quick rinse and pat them dry, but ensure they are completely dry before you decorate your cake with them.

Use a White Buttercream Frosting recipe, and frost the entire cake (even inside the ring). Once your cake is frosted, start with the top of the cake and carefully place 2 Mint Leaves, and 3 Cherry Sours in a bunch. To create a ring around the bottom of the cake, carefully overlap and tuck the back of each leaf behind the other, and with your extra frosting, dab each cherry in it to ensure the cherry will stick to your Mint Leaves. Prop your cake on a pretty Red or White Cake Stand, and voila! your Jolly Holly Christmas Cake is complete!Wreath Cake-Darcy Oliver Design

Retro Christmas Party

We started off the Holiday Season with a Retro Christmas Party this past weekend, and it was a swanky success! From the tinsel on the tree to the dreamy Sugar Plum Room with a Nutcracker Bartender to boot, everyone had a twinkle in their eye.

With a 14′ Christmas Tree and thousands of twinkle lights, there were sights to be seen in every corner. The best part of the Holidays is gathering your friends and family, having a toddy, and regaling tales in front of the fire. We served up one Naughty Grinch Cocktail and a Non-Alcoholic Berry Nice Punch, which complimented all the sweet and savory treats!
